How exactly and h=out of what material would I make Sasuke's shirt out of because I am confused as to how I would get the collars to stick straight up. :/.

I'd use a medium to heavy cotton, as that's probably the easiest thing to work with and will keep in shape will. You can use interfacing to stiffen the collar and make it stand or possibly starch.
