If I did it in pieces what would be the best way to connect it all together, some kind of glue? or pins? I would prob usually use hot glue gun but I can imagine it falling apart if it was knocked ^^;
Also I had a good look round but i could only find tutorials of plain bows, so if you have any that you could link that would be helpful ^_^
I don't think pins would work, unless you were using wood and nailed/screwed the parts together, but you'd have to find places to put them which would be discreet.
For foamboard you'd have to use glue, I don't think it would take screw very well, it seems to fragile to me, but I could be wrong.
Hot glue seems to be the most popular so I'd go with that, or people have recommended I use impact adhesive so it could be worth checking that out.

No matter how you do it, there's always going to be a risk that it could be damaged if knocked, it's the same for most props (I mean, you can break pretty much anything with enough force can't you?), so you'll just have to be careful with it, but using these materials it probably wont be too easily damaged and if you use a strong enough glue you shouldn't have to worry about it coming apart. I just use PVA glue for my gauntlets, and even though it's not that strong it still holds together well!
As for arrow tutorials, I'll have a look round and let you know if I find anything! Though you may have to just use a simple arrow tutorial and change it to your needs, or ask someone who's made one of these themself for tips!
If I can't find tutorials I usually search for other cosplayers to find those that have made props and ask them for help, most will be willing to give you some tips
Your best bet, if you can't find a tutorial (or just in general), would be to make small copies to practice with techniques and materials and then scale it up when you find something which works
