To get the hat to lie right you don't really need to add any padding to it. The band around the head and the ear flaps just need a layer of a heavy fabric in between two layers of your outer fabric. Using cut up pairs of old jeans is great for this, otherwise cotton drill is a good choce. If you stiffen the main band with fabric stiffener it will also prop up the top section without needing to padd it out ^-^
When making complicated patterns it's best to try it out in some really really cheap fabric first. Cut it all a wee bit larger than you intend the finished piece to be stitch it all together and try it on. If you need to make any adjustments you can cut pieces off or add more fabric too it. Then draw lines on in a thick marker pen where the finished pieces seams will be and you can then dismantle it and use it as your pattern. Making a good toile saves so much hassle!!
